Soup, made with yogurt, popular in Armenia


Spas (Armenian: Սպաս) is a matzoon-based soup.[1][2] It is a traditional dish in Armenia.[1][2] Besides matzoon, the main ingredient are herbs, and hulled wheat berries (i.e. with husks removed).

Flour, and an egg or egg yolk is included, to prevent the matzoon from curdling.[3] Herbs, such as coriander, thyme, parsley, and sometimes mint, are added as well. Butter and regular onions, or fried onions are also often added to the soup for a richer taste. It can also be served with meatballs.[4][5]

Traditionally there are 3 major variations. The first variation uses rice instead of wheat berries , the second uses bulgur instead of wheat berries, and the third uses barley instead of wheat berries.[4]

This soup is traditionally served warm in the winter and chilled in the summer.[1][2]
