DIBBA ROTTI
(Dibba rotti is a little known bread from Andhra Pradesh bought to the limelight by Aditya) Yield: 8 rottis Urad dal 200 grams Idly Rava 400 grams Cumin seeds 2 grams Green Chilly 2 no. Ginger 3 grams Salt To taste Oil 50 millilitres Method: • Soak urad dal and idli rava separately in water for 2 hours. • Grind urad dal into a smooth paste. • Mix the urad dal paste with idly rava. • Add salt, cumin seeds, finely chopped green chillies and ginger to this mixture. • In a heavy bottom vessel add 3 tsp of oil and pour in two ladles of batter. • Cover it with a plate and allow it to get roasted for 5 minutes. • Remove lid and flip roti over to roast the other side. • Serve hot with gun powder. This was made by a student of the Department of Culinary Arts, WGSHA, Manipal University. |
